Frugal Healthy Recipe: Asian Omelette

This is one of Helen’s family favorites. It is quick and easy to make.

Prep Time: 10 minutes
Cook Time: 10 minutes
Serves: 2-3 people

Ingredients:
4 large or extra large eggs
1/4 cup of room temperature water
3 tablespoons of Oyster Flavor Sauce
1/2 cup of cooked sliced chicken, pork, or uncooked, sliced shrimp
1 cup of uncooked bean sprouts
1/4 cup of chopped onion (optionally)
enough oil to cover bottom of pan

Directions:
Beat in a bowl, eggs, water, oyster flavor sauce until foamy. Set aside.

Heat frying pan. pour enough oil to cover bottom of pan. When pan is hot, sauteed onion for 2-3 minutes until wilted, then add bean sprouts. Continue to sauteed until bean sprouts are slightly wilted. Thin out bean sprouts mixture until there is a single layer covering the bottom of pan.  Add egg mixture. Move pan around to cook eggs slightly. With spatula pick up the edges so that the eggs will run under to cook. When the edges are slightly dry sprinkle with meat or shrimp. Continue cooking until eggs are set and brown underneath, with a spatula, flip egg in sections (flip  once.) Cook eggs until desire doneness. We like our eggs a little runny. Serve with rice
